Ingredients:
1/3 cupGolden Raisins
24 ozCatfish Fillets
1/4 cupAll-Purpose Flour
1/2 tspDried Whole Sage
1/2 tspGround Pepper
Vegetable Cooking Spray
1 tbspMargarine
3 tbspLemon Juice
1/4 cupChablis, or other Dry White
-Wine
1/4 cupDry Sherry
1 tbspLight Soy Sauce
Fresh Sage Leaves
Procedures:
1Place raisins in a small bowl; add enough water to cover.
2Let stand 10 minutes.
3Drain, and set aside.
4Rinse fillets with cold water, and pat dry.
5Combine flour, sage and pepper; dredge fillets in flour mixture to coat well.
6Coat a skillet with cooking spray; add margarine, and place over medium heat until margarine melts.
7Add fillets, lemon juice, and reserved raisins.
8Cover; reduce heat, and simmer 10 minutes.
9Remove cover, and turn fillets.
10Add wine, sherry, and soy sauce to skillet.
11Bring to a boil; reduce heat, and simmer 5 minutes or until wine mixture is slightly thickened.
12Carefully transfer fillets and wine mixture to a serving platter.
13Garnish with sage leaves, if desired.
