Ingredients:
SALAD
1 lbsBoneless chicken breasts
2 cupChicken stock
2 Cucumbers, thinly sliced
3 Stalks celery, thinly sliced
1 cupGreen grapes, halved
4 Scallions, sliced
1 tbspDried currants
DRESSING
1 cupLow fat yogurt
2 tbspCurry powder
1 tbspWhite wine vinegar
2 tspLime juice
Pn White pepper
Procedures:
1Poach breasts for 5-6 min. drain, cool and cut into 1" cubes.
2Place in bowl with salad ingredients.
3Whisk dressing ingredients.
4Gently fold into salad.
5Chill salad.
6Can be prepared up to 2 days in advance.
