Traditional scotish broth

Ingredients:
INGREDIENTS
1 lbsNeck of mutton or boiling
-beef 2 quarts cold water
1 tspSalt
2 tbspYellow split peas
2 medSize carrots
3 tbspDiced rutabaga
1/2 smallCabbage
Salt and pepper to taste
DIRECTIONS
2 tbspPearl barley
2 tbspDried green peas
2 Leeks
1 medOnion
1 tspFinely chopped parsley
Procedures:
1Put the meat,water, salt and washed pearl barley into a large saucepan.
2Bring to a boil very slowly and skim.
3Dice the vegetables and wash and shred the cabbage and add to the pan.
4Bring the soup back to a boil again and simmer very gently until the meat is cooked and the peas are tender - about two hours.
5Add parsley and salt and pepper to taste.
