Ingredients:
1/3 cupParmesan cheese, grated
1/4 tspItalian seasoning, crushed
3 xChicken breast, *
1/4 cupGreen onion, sliced
1 tbspMargarine
1 tbspFlour, all-purpose
1/2 cupMilk, skim
5 ozSpinach, frozen **
1 tbspPimiento, chopped
Procedures:

2Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside.
3Arrange pieces in an 8x8x2-inch baking dish.
4In a small saucepan cook onion in hot margarine till tender.
5Stir in flour; add milk all at once.
6Cook and stir till bubbly; stir in drained spinach and pimiento.
7Spoon spinach mixture over chicken; sprinkle with remaining cheese mixture.
8Bake, uncovered, in a 350f oven for 30 to 35 minutes or till tender.
