Ingredients:
1/2 cupShredded Carrot
1/4 cupSliced Green Onion
1 tspCurry Powder (Or Less)
1 tbspMargarine
1/2 cupSoft Bread Crumbs
2 tbspRaisins
1 tbspWater
4 xMed Chicken Breast Halves *
1/8 tspSalt
1/4 tspPaprika
1/4 cupLow-Fat Plain Yogurt
2 tspOrange Marmalade
Procedures:
1* 4 med (12 oz total) boned skinless chicken breast halves.
2~------------------------------------------------------------------------- in a small saucepan cook carrot, green onion, and curry powder in margarine till vegetables are tender.
3Remove from heat and stir in bread crumbs, raisins, and water.
4Place 1 chicken breast half, boned side up, between 2 pieces of clear plastic wrap.
5Working from the center to the edges, pound lightly with a meat mallet to ? thickness.
6Remove plastic wrap.
7Repeat with remaining chicken.
8Sprinkle chicken pieces lightly with salt.
9Place ?of the stuffing mixture on ?of each chicken breast.
10Fold the other half of the chicken breast over the filling.
11Secure with a toothpick.
12Place chicken in an 8x8x2" baking dish.
13Sprinkle with paprika.
14Bake, covered, 350°F for about 25 minutes or till chicken is tender and no longer pink.
15Meanwhile, combine yogurt and marmalade.
16To serve, dollop about 1 t yogurt mixture atop each piece of chicken
