Ingredients:
SAUCE
1 1/2 cupLow-sodium ketchup
1/2 cupTomato puree
1 tbspPaprika
1 tbspMinced fresh oregano
1/2 tbspGround cumin
1/4 tbspGround white pepper
1 cupWater
2 tbspDijon mustard
1 tbspMinced garlic
1 tbspMinced fresh thyme
1/4 tbspGrated nutmeg
2 cupCooked black beans, drained
PASTA AND VEGETABLES
1 cupChopped sweet red peppers
1 cupSmall broccoli florets
8 ozFettuccine or tagliatelle
1 cupChopped yellow peppers
1/2 cupDiced onions
Procedures:
1To make the sauce: in a 2 quart saucepan over medium heat, simmer the ketchup, water, puree, mustard, paprika, garlic, oregano, thyme, cumin, nutmeg and pepper for 15 minutes.
2(may be made ahead up to this point.
3Reheat before continuing).
4Add the beans.
5Keep warm over low heat.
6To make the pasta and vegetables: steam the red and yellow peppers for about 3 minutes; set aside and keep warm.
7Steam the broccoli and onions for 4 to 5 minutes, or until crisp-tender; set aside and keep warm.
8While the vegetables are steaming, cook the pasta in a large pot of boiling water until just tender, about 8 minutes.
9Drain and transfer to a large platter.
10Top with the sauce.
11Top with the vegetables
