Ingredients:
3/4 cupQuaker Oat Bran hot cereal
-uncooked
1 tspBaking powder
1 cupSkim milk
3 Egg whites, slightly beaten
1 tbspMargarine
1 cupRicotta cheese, part skim
1 smallApple, finely chopped
2/3 cupRaisins
1 tbspSugar, confectioners
1/2 tspVanilla
2/3 cupLite pancake syrup
1/4 tspCinnamon
Procedures:
1Combine oat bran and baking powder; add to combined milk, egg whites and margarine, mixing well.
2Heat a 6 to 7 inch crepe pan or skillet over medium heat; lightly coat with non-stick spray or lightly oil before making each crepe.
3Pour about ?cup batter onto hot prepared pan; immediately tilt pan to coat bottom evenly.
4Cook 1 to 1 ?minutes or until top looks dry.
5Turn; cook an additional minute.
6Stack between sheets of wax paper.
7Combine ricotta, apple, raisins, sugar and vanilla; mix well.
8Spoon about 2 tblsp.
9Along less evenly browned side of each crepe.
10Fold or roll up sides to cover filling.
11Combine syrup and cinnamon; heat over medium heat about 2 minutes, stirring occasionally, or until heated through.
12Just before serving, pour 2 tblsp.
13Over each crepe.
14Makes 5 servings--10 crepes.
