Ingredients:

| tbsp | +1 t rc margarine | | 3
| | Small mac. apples, cored & | | | Cut into ? thick slices | | 2
| tbsp | Dark raisins | | 3
| tbsp | Granulatd sugar | | 2
| tbsp | Orange juice | | 1
| tsp | Cinnamon | | 2
| | Large eggs | | 1/2
| cup | Skim milk | | 1/4
| cup | + 2 Tb. flour | | 1
| tsp | Vanilla extract |

Procedures:
| 1 | In heavy med. ovenproof skillet, melt 2 tsp of the margarine. | | 2 | Add apples, raisins, 1 t sugar, and orange juice and cinnamon. | | 3 | Cook, stirring freq. | | 4 | 6-8 minutes, until apples are just tender. | | 5 | Remove apples to bowl. | | 6 | Preheat oven to 425d. | | 7 | In small bowl, w/ electric mixer, beat eggs until foamy. | | 8 | Gradually add milk, flour, the remaining 2 tb. sugar and the vanilla; beat 2 minutes longer, until batter is smooth. | | 9 | Add remaining 2 tsp. margarine to same skillet. | | 10 | Place in oven to melt, abt 1 minute. | | 11 | Pour batter into skillet;bake 10 minutes. | | 12 | Remove from oven and spoon apple mixture into center of pancake. | | 13 | Return to oven and bake 12-15 min. longer until puffed and golden. | | 14 | Cut into quarters. | | 15 | Each serving: ?fa, ?p, ?b, 1 fr, 60 cal. |
