Ingredients:
2 1/2 lbsChicken pieces, skinned
2 Chicken Bouillon cubes
-Borden Low Sodium
1 tbspMargarine
1 cupGreen pepper, diced (1 med.
-pepper)
1 cupRadishes, thinly sliced
1 cupPineapple chunks, canned
-unsweetened
1/2 cupJuice from pineapple
1 tspLight soy sauce
2 tbspFlour
Ds Pepper
4 1/2 cupRice, cooked
Chow mein noodles, optional
Procedures:
1Simmer the chicken in water with bouillon cubes.
2Remove meat from bones and cut into chunks.
3Save 1 cup of chicken broth.
4While chicken is cooking, melt margarine in frying pan or wok and saute the radishes, green peppers, and pineapple until crisp tender, but not brown.
5(put rice on to cook).
6Mix 1 cup saved chicken broth with ?cup pineapple juice and 1 tsp. soy sauce.
7Add to pan.
8Mix flour with 1 tb. cold water and stir to remove lumps.
9Add to vegetables.
10Add cut up chicken and a dash of pepper, and cook until everything is hot.
11Serve over rice.
12If desired, sprinkle chow mein noodles on top.
