Ingredients:

| cup | Green pepper, diced (1 med. | | | -pepper) | | 1
| cup | Radishes, thinly sliced | | 1
| cup | Pineapple chunks, canned | | | -unsweetened | | 1/2
| cup | Juice from pineapple | | 1
| tsp | Light soy sauce | | 2
| tbsp | Flour | | | Ds Pepper | | 4 1/2
| cup | Rice, cooked | | | Chow mein noodles, optional |

Procedures:
| 1 | Simmer the chicken in water with bouillon cubes. | | 2 | Remove meat from bones and cut into chunks. | | 3 | Save 1 cup of chicken broth. | | 4 | While chicken is cooking, melt margarine in frying pan or wok and saute the radishes, green peppers, and pineapple until crisp tender, but not brown. | | 5 | (put rice on to cook). | | 6 | Mix 1 cup saved chicken broth with ?cup pineapple juice and 1 tsp. soy sauce. | | 7 | Add to pan. | | 8 | Mix flour with 1 tb. cold water and stir to remove lumps. | | 9 | Add to vegetables. | | 10 | Add cut up chicken and a dash of pepper, and cook until everything is hot. | | 11 | Serve over rice. | | 12 | If desired, sprinkle chow mein noodles on top. | | 13 | Serves (portion is ?cup mixture served over ?cup cooked rice). | | 14 | Nutrients per serving: calories 320, fat 7g, cholesterol 58mg, carbohydrate 39g, sodium 314mg. | | 15 | Exchanges: bread 2 ? meat |
