Ingredients:
2 1/2 lbsBeef round steak, cubed
10 1/2 ozCondensed onion soup
1 tspSalt
1 cupPitted whole prunes
1/4 tspPepper
18 ozVacuum-packed sweet potatoes
2 tbspPacked brown sugar
1 tbspLemon juice
1 Envelope brown gravy mix
Procedures:
1Place beef cubes in 2-quart glass casserole.
2Stir in seasonings, brown sugar, lemon juice and soup; cover with glass lid.
3Microwave for 10 minutes on high.
4Stir in prunes.
5Top with potatoes.
6Recover and continue cooking for 35 to 40 minutes, on simmer, or until meat is fork tender.
7Let stand, covered, 5 minutes before serving.
8Remove meat mixture to serving platter.
9Add gravy mix to cooking dish; stir well; recover.
10Microwave for 2 to 4 minutes, on high, or until thickened and hot (about 175 °F) pour gravy over meat and vegetables and serve.
