Ingredients:
8 Medium lamb chops, trimmed
1 canSliced peaches or apricots
- Del Monte Lite (16oz can)
2 tspInstant coffee crystals
2 tbspChopped parsley
Dash pepper
Procedures:
1In a large skillet brown meat; remove and keep warm.
2Drain fruit, reserving liquid in skillet.
3Add coffee crystals.
4Cook over high heat 5 minutes to reduce and thicken liquid.
5Return meat to skillet; simmer 8 to 10 minutes, turning frequently.
6Add fruit, parsley and pepper.
7Cover, heat through, about 5 minutes, and serve
