Ingredients:
1/4 cupBisquick baking mix
4 Boneless chicken breast
-halves (about 1 ?lb.)
1/4 cupCornflakes crumbs
9 ozJar sweet and sour sauce
1/4 tspSalt
8 1/2 ozCan pineapple chunks in
-syrup, drained
1/4 tspPaprika
1/8 tspPepper
1/4 medGreen pepper, cut into ?
-strips
Procedures:
1Mix baking mix, crumbs, salt, paprika and pepper in plastic bag.
2Moisten chicken with cold water.
3Shake chicken in bag, one piece at a time, to coat.
4Arrange chicken, skin sides up and thickest parts to outside edges, in square microwaving dish, 8 x 8 x 2".
5Cover with waxed paper and microwave on high (100%) 8 minutes; rotate dish ?turn.
6Microwave until done, 6 to 8 minutes.
7Place remaining ingredients in 4 cup microwaving measure.
8Cover with waxed paper and microwave on high (100%) 3 minutes; stir.
9Cover with waxed paper and microwave until green pepper is crisp-tender, 2 or 3 minutes.
10Serve over chicken
