Ingredients:
15 ozBlack Beans, Canned, *
3/4 cupTomato, Finely Chopped, 1 med
1 eachSerrano Chile, **
1/2 cupRed Bell Pepper, Chopped
1/4 cupRed Onion, Finely Chopped
2 tbspWhite Wine Vinegar
1 tbspVegetable Oil
1/4 tbspSalt
Procedures:
1* black beans should be canned and they should be rinsed and drained.
2** serrano chile should be seeded and finely chopped.
3Mix all ingredients.
4Cover and refrigerate until chilled, about 1 hour.
5Makes about 2 ?cups relish
