Ingredients:

| tbsp | Chopped cilantro | | 12
| each | Black olives, pitted, sliced | | 8
| each | 6" wholewheat tortillas | | 4
| oz | Soy cheese/jalapeno jack | | | -- shredded | | 32
| each | Spinach leaves, shredded | | 4
| tbsp | Hot salsa |

Procedures:
| 1 | Mash beans. | | 2 | Stir in tomato, cilantro & olives. | | 3 | Spread evenly onto 4 tortillas. | | 4 | Sprinkle with cheese, spinach & salsa. | | 5 | Top with remaining tortillas. | | 6 | Preheat oven to 350°F. | | 7 | Bake tortillas on ungreased cookie sheet for 12 minutes. | | 8 | Cut into wedges & serve. | | 9 | "vegetarian times" july, 199 |
