Ingredients:
15 ozCan black beans, drained
1/4 cupChopped tomato
3 tbspChopped cilantro
12 eachBlack olives, pitted, sliced
8 each6" wholewheat tortillas
4 ozSoy cheese/jalapeno jack
-- shredded
32 eachSpinach leaves, shredded
4 tbspHot salsa
Procedures:
1Mash beans.
2Stir in tomato, cilantro & olives.
3Spread evenly onto 4 tortillas.
4Sprinkle with cheese, spinach & salsa.
5Top with remaining tortillas.
6Preheat oven to 350°F.
7Bake tortillas on ungreased cookie sheet for 12 minutes.
8Cut into wedges & serve.
