Ingredients:
8 ozCan Tomato Sauce
1/4 tspBasil leaves
1/8 tspFresh Ground Pepper
1 cupRicotta cheese
1 tspParsley
1 largeTomato
1 medOnion, chopped
1/4 tspSalt, optional
1/4 tspOregano leaves
1/2 cupShredded Mozzarella Cheese
3 medZucchini, about 9-in.long
2 tbspGrated Parmesan Cheese
Procedures:
1Combine tomato sauce, onion, basil, salt, pepper & oregano in small mixing bowl; set aside.
2In medium bowl, combine ricotta, mozzarella and parsley.
3Set aside.
4Peel zucchini and cut off ends.
5Slice zucchini lengthwise into strips.
6Arrange strips in 8x8-in.
7Baking dish.
8Cover with wax paper.
9Microwave at high for 6 to 8 minutes, or until fork tender, rearranging after half the time.
10Drain liquid; place zucchini on towels to absorb excess moisure; cool slightly.
11Layer 4 to 6 of the strips in the bottom of baking dish.
12Reserve 6 strips for second layer.
13Spread ricotta mixture over zucchini.
14Layer with sliced tomatoes.
15Spread half of tomato sauce mixture over tomatoes; top with zucchini slices.
16Pour remaining sauce over zucchini and sprinkle with parmesan.
17Reduce power to 50% (medium).
18Microwave uncovered 20 to 25 minutes or until zucchini is tender and mixture is hot in center.
19Let stand 5 minutes before serving
