Ingredients:
APPLE PANCAKES
2 Eggs
2 cupButtermilk
1/4 cupButter, melted
1 3/4 cupAll-purpose flour
3 tbspGranulated sugar
2 tspBaking powder
1 tspBaking soda
1/2 tspSalt
1/2 tspGround cinnamon
1/4 tspGround nutmeg
1 1/2 cupChopped tart red apples
-(peeled)
MAPLE PECAN BUTTER
1 cupButter, softened
3/4 cupChopped pecans
1/2 cupMaple syrup
Procedures:
1Make maple pecan butter.
2In small mixer bowl, beat butter on medium speed until light.
3Add pecans; mix well.
4Gradually beat in syrup.
5Set aside while making pancakes.
6For apple pancakes: in medium bowl lightly beat eggs with wire whisk.
7Add buttermilk and melted butter and whisk until smooth.
8Add dry ingredients and mix only until moistened.
9Stir in apples.
10Heat large non-stick griddle or skillet until hot.
11Melt a little of the butter on griddle until bubbly but not brown.
12For each pancake, spoon about ?cup batter onto griddle.
13Cook until bubbles form and edges are cooked.
14Turn and cook until second side is golden.
15Keep pancakes warm on platter in 200 degree oven while preparing remaining batter.
16Serve warm with maple pecan butter.
17Yield: 16 to 18 (4-inch) pancakes.
