Cilantro waffle chips with chunky guacamole

Ingredients:
1 tbspUnsalted butter
1/2 cupAll-purpose flour
1/2 cupCornmeal
1 1/4 tbspDouble-acting baking powder
1/4 tbspBaking soda
1/4 tbspSalt
1/8 tbspFreshly ground black pepper
1 cupButtermilk
1 largeEgg
1/4 cupChopped fresh cilantro
1 tbspFinely chopped jalapeno
-pepper
2 tbspCorn oil
Sour cream or plain yogurt
-for additional topping
Procedures:
1Preheat waffle iron.
2Preheat oven to 200°F.
3Melt butter; reserve in a large bowl, whisk together flour, cornmeal, baking powder, baking soda, salt and pepper to mix.
4In another bowl, beat together buttermilk and egg until well blended and whisk into dry ingredients.
5Stir in cilantro and jalapeno.
6Fold in corn oil and melted butter, mixing only until combined.
7Lightly butter or spray grids of your waffle iron, if needed.
8Brush or spray grids again only if subsequent waffles stick.
9Spoon out ?cup of batter (or amount your waffle maker"s manufacturer suggests) onto iron, spreading it evenly to edge of grids with a metal spatula or wooden spoon.
10Close lid and bake until golden and crispy.
11Remove waffle from iron and separate into hearts or cut into whatever size pieces you want.
12Place on a baking sheet, in a single layer, and put into preheated oven.
13Continue making rest of batch and putting finished waffles on sheet in oven.
14The waffles should bake in oven for 1 to 1 ?hours, or until they are very crispy.
15Serve immediately or cool on a rack and serve at room temperature
