Ingredients:
1/2 cupFlour
1 tspBaking powder
1/2 tspBaking soda
1 tspSugar
1/4 tspSalt
1/3 cupCornmeal
1 Egg
-or-
2 Egg whites
1 cupButtermilk
-or-
Fresh plain yogurt
2 tbspVegetable oil
1 cupCorn kernels
Cooked and drained
1/4 cupMild chiles, roasted
Chopped, peeled, & seeded
1/4 cupFresh cilantro, chopped
1/3 cupScallions, chopped
Vegetable oil
Mild salsa
Sour cream
Procedures:
1In large bowl, sift together the flour, baking powder, baking soda, sugar and salt.
2Stir in cornmeal.
3In another bowl, lightly beat egg or egg whites, add buttermilk, oil, corn, chiles, cilantro and scallions.
4Add to dry ingredients; stir until combined.
5Place a griddle or large skillet over medium-high heat.
6When hot, brush with oil, then drop batter by large tablespoonfuls onto griddle.
7Cook until tiny holes form on each pancake.
8Turn pancakes; brown on other side.
9Pass mild salsa and sour cream to spoon over pancakes
