Ingredients:
1 1/2 cupFlour
1/4 cupCocoa powder
1 tspBaking powder
1 tspBaking soda
1/3 cupSugar
2 cupButtermilk
1/2 cupVegetable oil or melted butt
2 largeEggs, separated
1 tspVanilla extract
Pinch cream of tartar
1 cupChopped pecans (optional)
Ice cream, for accompaniment
Procedures:

3In a separate bowl mix buttermilk, oil, egg yolks, and vanilla.
4Pour into the well and mix with dry ingredients.
5Beat egg whites with cream of tartar until soft peaks form.
6Gradually fold into batter, one third at a time.
7Fold in pecans (if used).
8Cook in waffle iron according to manufacturer"s instructions.
9Top with ice cream.
10Makes 4 large waffles
