Ingredients:
3 cupCooked brown rice
2 cupShredded mozzarella cheese

1 cupCrunch peanut butter

1 Egg, beaten
Vegetable cooking spray
1/2 cupHot water
1/4 cupCilantro, minced
2 tbspSoy sauce
3 tbspDark sesame oil, divided
1/4 tspGround red pepper
2 cupBroccoli flowerets
1 medRed onion, chopped
2 largeCarrots, julienned
Procedures:
1Combine rice, 1 cup cheese, ?cup peanut butter and egg in large bowl.
2Press firmly into 12-inch pizza pan or 10-inch pie pan coated with cooking spray.
3Bake at 400 °F.
4For 8 minutes.
5Mix remaining ?cup peanut butter, water, cilantro, soy sauce, 2 tablespoons sesame oil and red pepper in small bowl; set aside.
6Stir-fry broccoli, onion and carrots in remaining 1 tablespoon sesame oil in large skillet over medium-high heat until tender-crisp.
7Spread sauce over crust; top with vegetable mixture.
8Sprinkle with remaining 1 cup cheese.
9Bake at 400 °F.
10For 10 to 12 minutes.
11Let stand 5 minutes before serving.
