Ingredients:
15 ozVan Camp's Red Kidney Beans
-- (Dark or Light)
12 ozWhole kernel corn, drained
6 ozMonterey jack cheese
-- shredded
8 ozTomato sauce
4 ozCanned chopped green chilies
-- drained
1 dashLiquid red pepper sauce
1 medZucchini, sliced
1/2 cupEnriched Corn Meal
-- (Aunt Jemima or Quaker)
1/2 cupMilk
1 Egg, beaten
Procedures:
1Heat oven to 350°F.
2In 8-inch square glass baking dish, combine beans, corn, ?cup (3 oz).
3Cheese, tomato sauce, chilies and red pepper sauce; mix well.
4Top with zucchini.
5Combine corn meal, milk and egg; mix well.
6Pour over top of vegetable mixture.
7Bake 40 minutes.
8Sprinkle with remaining ?cup (3 oz).
9Cheese; continue baking about 2 minutes or until cheese melts.
