Ingredients:

| each | Flat teaspoon bi-carbonate | | | -soda | | 100
| each | Unsalted butter | | 500
| each | Brown lour | | 100
| each | Sugar | | | Cinnamon | | 2
| each | Eggs | | | Almonds for decoration | | 2
| each | Egg yolks | | | L Sour cream |

Procedures:
| 1 | Warm honey. | | 2 | Add sugar, butter, eggs and gradually the flour. | | 3 | Work with a wooden spoon until very smooth and bubbles appear on the surface. | | 4 | Leave to stand overnight. | | 5 | Make balls or roll out to 1cm thickness and cut into small rounds. | | 6 | Brush with egg yolk and sour cream mix. | | 7 | Top with almonds. | | 8 | Bake for 6 minutes at 420, then lower temperature of oven to 350 and bake for a further 8 minutes. | | 9 | Do not brown. | | 10 | Will be hard for 3 to 4 days. | | 11 | Keeps well. | | 12 | Honey biscuit |
