Hearts of palm and leek soup

Ingredients:
2 tbspOlive oil
1 clGarlic, diced
1 largeOnion, chopped
2 Leeks, white part only
-diced
2 canHearts of palm(15oz ea)
-drained and diced
1 3/4 cupVegetable broth
Salt and pepper
1 cupWhipping cream
1 smallTomato, diced
1 Scallion, diced
Procedures:
1Heat the olive oil in a skillet over medium heat, and saute garlic, onion, and leeks for about 5 minutes.
2Add all but 2 tablespoons of the hearts of palm and saute for another 2 minutes.
3Add the vegetable broth and simmer for 15 minutes.
4Add salt and pepper to taste and remove from the heat.
5Allow to cool 5 minutes.
6Stir in the whipping cream, and ladle the mixture into a blender or food processor.
7Blend until smooth, return to pan and gently reheat.
8Meanwhile mix the tomato, scalliom, and reserved hearts of palm for garnish.
9When soup is heated through, top with garnish.
