Beef tenderloins with mushroom stuffing

Ingredients:
4 tbspMargarine
3/4 lbsButton Mushrooms finely
Chopped
4 ozDeli Ham sliced thin
1/2 cupGreen onions
1 tspSalt
1/4 tspFreshly ground black pepper
3 cupWhite bread cubes
3 lbs2 Beefloin tenderloins
(center cut) each weighing
App. 1 ?lb.
Procedures:
1In 12 inch skillet, melt margarine, add chopped mushrooms, diced ham, chopped green onion, salt and pepper.
2Cook until tender.
3Add bread cubes and 2 t. water toss gently to mix.
4Set aside make a lengthwise cut in tenderloin, cutting 1 ?in deep.
5Spoon ?half of cooled stuffing mixture into each tenderloin pocket.
6Tie each tenderloin securely with string in several places.
7Preheat broiler, place both tenderloins cut side up, on rack broil 15 minutes.
8Cover to prevent stuffing from over browning if necessary.
9Carefully turn tenderloins, and broil the other side 20 minutes longer or longer for desired doneness.
10Let stand 15 minutes before serving.
