Ingredients:
3 1/2 cupAM Blue Cornmeal
1 tspNon-alum baking powder
2 tspCumin
2 tspChili powder
2 cupMilk or water
1 Egg, beaten or egg replacer
1 cupChopped green chilis
1 tbspAM Unrefined Vegetable Oil
1 medOnion, chopped
2 cupPinto beans

1 cupTomato sauce
2 1/2 cupGrated cheese
Chopped green onions

Procedures:
1Combine first three ingredients.
2Combine milk, egg and chilies in a separate bowl.
3Saute" chopped onion in oil and add to milk mixture; stir into cornmeal mixture, then pour half of batter into the bottom of an oiled casserole dish (rectangular).
4Layer with beans, tomato sauce, and cheese; repeat layering.
5Bake at 375°F. for 40 minutes, garnish with chopped green onions and serve with salsa.
