Ingredients:

1/2 cupSake
1/4 cupMirin (sweet rice wine)
3/4 cupJapanese soy sauce
1/4 cupSugar
1 ozTamari
1 tspGrated fresh ginger
Procedures:
1Combine all ingredients in a small saucepan and bring to a boil.
2Cook until reduced by a quarter.
3Cool.
4Store in the refrigerator.
5Makes about 1 ?cups.
6To use: dip thinly sliced meat, chicken cubes, shrimp or fish filets in the glaze, then grill.
7May also be brushed on food as it cooks
