Beef tongue with lentils

Ingredients:
5 tbspButter
1 cupOnion, chopped fine
1 tbspGarlic, minced
1/4 lbsCooked ham, cut into very
Small cubes(about ?cup)
1 lbsLentils
3/4 cupCanned tomatoes
1/4 cupTomato paste
5 cupWater
1 Bay leaf
1/4 tspThyme
4 Sprigs of parsley
2 1/4 lbsFully cooked tongue
In one piece
Procedures:
1Heat 2 tbsp of butter in a large saucepan or small kettle and add the onions and garlic.
2Cook, stirring, until wilted.
3Add the ham and lentils and stir briefly.
4Add the tomatoes with tomato paste, water, bay leaf, thyme and parsley.
5Add the tongue.
6Bring to a boil.
7Cover the pan and let simmer 35 min. oe until the lentils are tender.
8Remove the tongue.
9Stir the remaining butter into the lentil mixture.
10Discard the bay leaf.
11Slice the tongue and serve with the lentils.
