Tofu to niku donburi

Ingredients:
6 ozTofu (2 squares)
2 Carrots, shredded
2 Green onions
-chopped fine
1/2 cupParsley, chopped fine
2 Eggs
8 ozShrimp, crab, or
-crab blend (or less)
2 tbspOil (for frying)
3 tbspSoy sauce
2 tspSugar
Procedures:
1Heat the oil and saute all the vegetables until tender (3-4 minutes).
2Mash the tofu with a fork.
3Add the shrimp or crab, tofu, soy sauce and sugar to vegetables.
4Mix well.
5Cook until everything is heated.
6Beat the eggs and pour over mixture.
7Cook until eggs are done.
8Serve in a bowl over rice.
