Ingredients:
1 lbsBeef tenderloin tips
1 tbspOlive oil
1/2 tspSalt
1/4 tspPepper
1 packMixed European salad greens
-(8 to 10 oz. package)
Prepared croutons
DIJON DRESSING
1/2 cupOlive olive oil
1/4 cupGrey Poupon Dijon Mustard
-OR- Country Dijon Mustard
1/4 cupBalsamic vinegar
1 tspSugar
1/4 tspPepper
Procedures:
1Cooking & preparation time: 20 min In medium bowl, whisk together dressing ingredients until creamy.
2Set aside.
3Trim fat from beef; cut into 1" x ? pieces.
4In large nonstick skillet, heat 1 tablespoon oil over medium-high heat until hot.
5Add beef (?at a time) and sitr-fry 2 to 3 minutes or until outside surface is no longer pink.
6(do not overcook) season with ?teaspoon salt and ?teaspoon pepper.
7In large bowl, combine greens and ?cup reserved dressing; toss to coat.
8Arrange greens on serving platter; top with beef and croutons.
9Serve immediately, passing additional dressing.
