| pint | Niban Dashi | | 1
| pinch | MSG | | 1/4
| tsp | Soy Sauce | | 1
| pinch | Salt | | 2 1/2
| tsp | Sugar | | 1 1/2
| tsp | Sake | | | DRESSING | | 1 1/2
| oz | White Sesame Seed, Ground | | 1 1/2
| tsp | Sugar | | 2 1/2
| tbsp | Sake | | 5
| tsp | Soy Sauce |

Procedures:
| 1 | Prepare in advance: snip off ends of french beans and discard. | | 2 | Cut beans into ? lengths. | | 3 | Drop them into ?pt of lightly salted boiling water, reduce heat and cook briskly, about 8-10 minutes until beans are tender but still slightly resistant to bite. | | 4 | Drain and run under cold water. | | 5 | Put the dashi, sugar, ?t salt, msg, sake and soy sauce into a pan. | | 6 | Bring to a boil. | | 7 | Add the beans, return to boil. | | 8 | Remove from heat and let cool to room temperature. | | 9 | Dressing: heat sake to likewarm over a high heat. | | 10 | Ignite sake and let burn until the flame dies out. | | 11 | Pour sake into a small bowl and let cool to room temperature. | | 12 | Add all ingredients and mix thoroughly. | | 13 | To serve: toss together the french beans and dressing, serve at room temperature |
