Basic teriyaki sauce

Ingredients:
1 cupMirin wine
1 cupSake
1 cupJapanese soy sauce
1 cupDashi
1 tbspSugar
Procedures:
1Warm the mirin and sake in a saucepan over moderate heat.
2Remove the pan from the burner.
3Carefully, ignite the mixture and shake back and forth until the flame dies.
4Return pan to the burner and add the soy sauce, dashi and sugar; bring to a boil.
5Cool to room temperature.
6Set aside in a saucepan ?cup of the teriyaki sauce.
7Dip pieces of meat (chicken, sliced beef, etc).
8Into remaining sauce to marinate.
9Grill meats.
10Reduce the sauce in the saucepan over high heat into a thickened glaze.
