Indonesian ketjap manis sauce for chicken or fish

Ingredients:

2 Garlic cloves, minced
1/4 cupKetjap manis, store bought
-or homemade (below)
1/4 cupFresh lime juice
2 tbspSafflower oil
Ketjap Manis:
3/4 cupSugar
1 cupSoy sauce
2 tbspWater
1 tbspSliced lemon grass
1 Clove garlic, minced
1 Star anise
Procedures:
1Combine all ingredients.
2Mix well, makes enough for 1 pound of chicken or fish.
3To use: cut chicken or fish into cubes.
4Place in a glass bowl, pour in sauce and toss to coat.
5Let marinate 30 minutes to 1 hour before grilling.
6Ketjap manis: caramelize ?cup sugar in a heavy pot.
7Gradually stir in 1 cup soy sauce, 2 tablespoons water, 1 tablespoon sliced lemon grass, 1 minced garlic clove and 1 star anise.
8Bring to a boil, lower heat and simmer for 10 minutes.
9Cool and strain through cheesecloth.
10Makes about 1 ?cups.
