Ingredients:

| lbs | Beef tenderloin or sirloin | | | - cut in 2-by-1-in strips | | 1/2
| tsp | Salt | | 1/4
| tsp | Pepper | | 1
| | Onion, in ?in slices | | 4
| tbsp | Butter | | 2
| tbsp | Flour | | 1
| cup | Beef stock | | 1
| tsp | Dijon mustard | | 1/4
| cup | Sour cream, room temperature |

Procedures:
| 1 | Spread beef strips on a baking sheet, sprinkle with salt and pepper, top with onion slices and let stand at room temperature for 2 hours. | | 2 | Melt 2 tablespoons butter in a skillet and stir in flour. | | 3 | Mix in stock and heat, stirring until thickened. | | 4 | Blend in mustard and remove from heat. | | 5 | In another skillet, melt remaining butter, add beef and onion and saute until browned. | | 6 | Add the beef (but not the onion) to the sauce and simmer 15 minutes. | | 7 | Remove from heat and stir in sour cream. | | 8 | Serve onions separately or reserve for another use |
