Ingredients:
4 tspOil
2 eachLarge onions, sliced
1 1/2 tspSalt
4 lbsLean beef stew meat
1 cupBurgundy wine
1 packFrozen artichoke hearts
2 pack(8 oz) refrigerated biscuits
1 clGarlic, split
1/3 cupFlour
1/2 tspDill weed
1 canBeef consomme
1 canMushrooms (drained)
Butter
Grated Parmesan cheese
Procedures:
1Heat oil.
2Saute garlic and onions.
3Remove.
4Mix flour, salt, pepper.
5Dredge meat and brown well.
6Return onion to pot.
7Add dill weed, wine, and consomme.
8Cover tightly and simmer about 2 hours or until meat is tender.
9Cook artichokes 1 minute less than package directions.
10Add to meat.
11Add mushrooms.
12Mix gently.
13Taste for seasoning.
14Pour into 2 ?quart casserole.
15Crown with biscuits (brush with butter and parmesan cheese).
16Bake 15 to 20 minutes at 400 degrees.
17Note: i usually cook the stew in the pot, add canned artichokes (not marinated) with the mushrooms, simmer until the mushrooms are done, and serve with french bread.
