2/3 cupDRY RED WINE OR WATER
1/2 cupBEEF BROTH
1/4 cupQUICK COOKING TAPIOCA
1 tbspSUGAR
2 tspDRY HERBS, YOUR CHOICE
2 tspSALT
2 eachSMALL BAY LEAVES
1/2 tspPEPPER
ADD SECOND TO POT
3 lbsBONELESS CHUCK ROAST
ADD THIRD TO POT
1 lbsCARROTS, CUTUP
4 eachRIBS CELERY, CUTUP
3 eachMEDIUM ONIONS, QUARTERED
Procedures:
1Preheat oven to 325 deg f.
2In a large pot, combine all the liquid and spices.
3Add in 3 lbs.
4Cubed beef (boneless chuck).
5Add all vegetables.
6Stir to mix.
7Cooked, covered, for 3 hours.
8Stir twice during cooking.
9Discard bay leaves before serving or refrigerating.
10Makes 8 servings, each = 318 calories, 39 g protein, 17 g carbo, 10 g fat, 100 mg chol, 836 mg sodium.
11Each serving = 28.8 % calories from fat.
12Note: for family - serve stew as is over buttered noodles.
13For company - add 12 ounces of mushrooms and 2 tablespoons coarse-grain dijon mustard.
14Add 10 ounces frozen peas about 5 to 6 minutes before serving, stirring well to mix in. for party serve with mashed potatoes or your favorite pasta
