Ingredients:
1 quartWater
2 1/2 cupSugar
1 Vanilla bean split
4 Pears, peeled
4 ozDark sweet chocolate
1/2 cupWhipping cream
French vanilla ice cream
Procedures:
1Combine water,sugar and vanilla bean in large sauce pan and bring to boil.
2Add pears, reduce heat and cook gently until tender (30 minutes).
3Refrigerate pears and syrup for 24 hours.
4Remove vanilla bean from syrup.
5Melt chocolate in heavy pan over low heat, stirring frequently until smooth and glossy.
6Scrape vanilla bean pulp into chocolate.
7Add cream and bring to a boil, stirring constantly.
8Remove from heat.
9To serve, place scoop of ice cream in bowl.
10Place pear alongside ice cream and spoon chocolate sauce over top
