Ingredients:
3 quartVanilla ice cream
2 tspPumpkin-pie spice
3 pintWhipping cream
1 cupConfectioners' sugar
1 tspVanilla extract
6 dropRed food coloring
5 dropYellow food coloring
Candied citron
-(1 ?x ?x ?inch)
Procedures:
1Should be done a day ahead.
2Line two identical 1 ?quart bowls with foil.
3Chill.
4Let ice cream soften slightly.
5Spoon 1 ?quarts into each bowl, sprinkling with spice.
6Smooth tops and freeze, covered, overnight.
7To assemble pumpkin: in lg chilled bowl, combine cream, sugar, vanilla, and food coloring.
8Beat mixture till stiff.
9Refrigerate.
10Turn ice cream out of bowls; remove foil.
11Place the 2 flat surfaces together to form a ball.
12Place on a cookie sheet.
13With small spatula, spread whipped cream evenly over ice cream ball; make grooves with spatula, to give a pumpkin-like appearance.
14Insert piece of citron in top for a stem.
15Place pumpkin in freezer till needed.
16Set pumpkin on serving tray.
17Decorate with autumn leaves.
18Serve with chocolate sauce, if desired
