Ingredients:
1 pintIce cream, any flavor
2 Egg whites
3 tbspAlmond paste (3oz)
3/4 cupGraham cracker crumbs
3 cupVegetable oil for frying
4 Peach halves
1 cupVanilla sauce
3 tbspWalnuts, chopped
4 Mint sprigs
Procedures:
1Scoop ice cream into 4 balls.
2Freeze until very hard.
3Blend egg whites into almond paste until smooth.
4Dip ice cream balls into almond paste mixture, then coat heavily with graham cracker crumbs.
5Freeze until very hard.
6Store, wrapped, in freezer until serving time.
7When ready to serve, heat oil in a 1 ?quart saucepan to 360 °F.
8Fry one ball at a time until golden brown, about 15 seconds.
9Drain on paper towels.
10Serve at once in a peach half in a champagne glass.
11Top with vanilla sauce, chopped walnuts and a sprig of walnuts.
