Ingredients:

| oz | Evaporated milk | | 1
| pack | Unflavored gelatin | | 3/4
| cup | Sugar | | 12
| oz | Apricot nectar | | 1 1/2
| cup | Fresh apricots, diced | | | - about ?lb | | 1/2
| pint | Plain yogurt | | 1
| tsp | Vanilla |

Procedures:
| 1 | Combine evaporated milk and gelatin in large saucepan. | | 2 | Heat, stirring often, until gelatin dissolves. | | 3 | Add sugar and heat until it dissolves. | | 4 | Using a wire whisk, stir in apricots, apricot nectar, yogurt and vanilla. | | 5 | Pour mixture into canister of ice cream machine. | | 6 | Churn 20-30 minutes or until softly frozen. | | 7 | Pack into containers and freeze. | | 8 | For best flavor, let ice cream soften slightly before serving. | | 9 | Makes 2 quarts |
