Fresh apricot ice cream

Ingredients:
12 ozEvaporated milk
1 packUnflavored gelatin
3/4 cupSugar
12 ozApricot nectar
1 1/2 cupFresh apricots, diced
- about ?lb
1/2 pintPlain yogurt
1 tspVanilla
Procedures:
1Combine evaporated milk and gelatin in large saucepan.
2Heat, stirring often, until gelatin dissolves.
3Add sugar and heat until it dissolves.
4Using a wire whisk, stir in apricots, apricot nectar, yogurt and vanilla.
5Pour mixture into canister of ice cream machine.
6Churn 20-30 minutes or until softly frozen.
7Pack into containers and freeze.
8For best flavor, let ice cream soften slightly before serving.
9Makes 2 quarts
