Ingredients:
4 lbsBeef short ribs
3/4 cupWhite vinegar
1 1/2 cupWater
3 tbspLight soy sauce
6 Garlic clove
2 Shallot
1 tbspCoarsely ground black pepper
1/2 tbspSalt
2 Bay leaf
2 tbspVegetable oil
2 bunchFresh spinach
Procedures:
1Have your butcher cross-cut the rib bones into 1-inch long sections.
2Trim off and discard fat; cut meat into approximately 1-inch cubes leaving the bones attached.
3Place beef into a saucepan with vinegar, water, soy sauce, garlic, shallots, black pepper, salt and bay leaves; bring to a boil.
4Lower heat and simmer, covered, for 40 minutes.
5Remove beef.
6Degrease vinegar liquid; bring to a boil.
7Lower heat and reduce to 2/3 cup.
8Heat oil in a skillet; brown beef until evenly seared.
9Pour sauce over beef
