Almond-snow fruit boats

Ingredients:
4 Apple, unpeeled, thin sliced
3 Banana, peeled, thin sliced
3 Pear, unpeeled, thin sliced
2 Pineapple, fresh (with tops)
2 Strawberry, halved, -tops
1 1/2 lbsGrape, halved, seeded
1 pintKumquat
1 1/2 cupWhipping cream
1 1/2 cupPowdered sugar, sifted
4 tspVanilla
1/4 tspAlmond extract
2 quartIce, finely crushed
3/4 cupAlmonds, toasted & slivered
3/4 cupFresh orange juice
1/4 cupKirsch
Procedures:
1Sprinkle bananas, apples and pears with fresh lemon juice.
2Cut pineapples in half.
3Using curved serrated knife, hollow out pineapple halves, leaving ? shell (reserve shells and all juice).
4Discard core.
5Cut pineapple into ? cubes.
6Transfer to large bowl.
7Add sliced fruit* and toss lightly.
8Cover and refrigerate up to 2 hours.
9For ice cream: blend cream, powdered sugar and extracts in large bowl.
10Gradually fold in ice (or fresh clean snow) until mixture is consistency of ice cream.
11Fold in nuts.
12Add reserved pineapple juice to fruit.
13Blend in orange juice and kirsch.
14Spoon fruit into pineapple shells.
15Top with ice cream.
16Serve immediately.
