| cup | Fresh chopped parsley | | 1/3
| cup | Matzo meal | | 1
| | Egg, lightly beaten | | 1/8
| tsp | Ground nutmeg | | 1/2
| tsp | Sal, t | | 1/8
| tsp | Pepper |

Procedures:
| 1 | Combine turkey, parsley, matzo meal, egg, nutmeg, salt and pepper. | | 2 | Chill 2 hours or overnight. | | 3 | Roll into small balls 1" in diameter. | | 4 | Drop gently into pot of boiling water. | | 5 | Cover and cook for 5 to 7 minutes or until cooked in center. | | 6 | Chill and reheat when needed. | | 7 | Makes 20 to 24 balls. | | 8 | To reheat: cover with foil and place in a 350 deg.ove |
