| cup | ITALIAN TOMATOS, PUREED | | 2
| tsp | BASIL LEAVES | | 3
| cup | COOKED ZITA MACARONI | | 6
| oz | COOKED VEAL SAUSAGE | | 1/2
| cup | PART SKIMMED RICOTTA CHEESE | | 2
| tbsp | PARMESAN CHEESE, GRATED | | 2
| oz | MOZZARELLA CHEESE, SHREDDED |

Procedures:
| 1 | In a 1 quart microwavable casserole, combine onion, oil and garlic. | | 2 | Micro- wave on high for 1 minute. | | 3 | Stir in tomatoes and basil. | | 4 | Cover with waxed paper and microwave for 10 minutes on high. | | 5 | Stir every two minutes. | | 6 | Transfer ?cups of tomato mixture to a medium bowl. | | 7 | Add zita, sausage, ricotta cheese and parmesan cheese. | | 8 | Mix well. | | 9 | Spray 1 quart microwavable casserole with cooking spray; spread zita mixture evenly in casserole. | | 10 | Spread with remaining tomato, then sprinkle with mozzarella cheese. | | 11 | Microwave on high for 5 minutes. | | 12 | Each serving provides: 2 ?protein exchanges, 1 ?bread exchange |
