Ingredients:
1/2 cupDICED ONION
2 tspOLIVE OR VEGETABLE OIL
1/2 tspGARLIC POWDER
3 cupITALIAN TOMATOS, PUREED
2 tspBASIL LEAVES
3 cupCOOKED ZITA MACARONI
6 ozCOOKED VEAL SAUSAGE
1/2 cupPART SKIMMED RICOTTA CHEESE
2 tbspPARMESAN CHEESE, GRATED
2 ozMOZZARELLA CHEESE, SHREDDED
Procedures:
1In a 1 quart microwavable casserole, combine onion, oil and garlic.
2Micro- wave on high for 1 minute.
3Stir in tomatoes and basil.
4Cover with waxed paper and microwave for 10 minutes on high.
5Stir every two minutes.
6Transfer ?cups of tomato mixture to a medium bowl.
7Add zita, sausage, ricotta cheese and parmesan cheese.
8Mix well.
9Spray 1 quart microwavable casserole with cooking spray; spread zita mixture evenly in casserole.
10Spread with remaining tomato, then sprinkle with mozzarella cheese.
11Microwave on high for 5 minutes.
12Each serving provides: 2 ?protein exchanges, 1 ?bread exchange
