Ingredients:
2 tbspOlive oil
1/2 cupChopped onion
2 eachClove garlic, minced
28 ozTomatoes, undrained (can)
2 tbspChopped fresh parsley
2 tspBasil
1 tspSugar
1/2 tspOregano
1/2 tspSalt
1/4 tspPepper
3 cupTri-mixed pastas
1 cupShredded mozzarella cheese
Procedures:
1In 2-quart saucepan, heat oil and cook onion and garlic until tender but not brown.
2Stir in tomatoes with liquid, parsley, sugar, basil, oregano, slat and pepper; bring to a boil and then reduce heat and simmer, stirring occasionally to break up tomatoes, 15 to 20 minutes.
3Meanwhile, cook the pasta until tender and drain.
4Toss pasta with the sauce and place in a 1-quart casserole.
5Top with mozzarella cheese and broil for 3 minutes or until the cheese is melted
