South-of-the-border rice dressing

2/3 cupLong-grain rice
1 1/3 cupWater
1 cupCornmeal
1/2 tspSalt
1/2 tspBaking soda
1 cupSkim milk
1 can8oz cream-style corn
2 Eggs, lightly beaten
1/2 cupOnion, chopped
1 canGreen chilies, chopped
2 tbspJalapenos, minced(optional)
1 tbspVegetable oil
3/4 cupLowfat Monterey Jack cheese
Grated, optional
Salt & pepper
Procedures:
1Combine rice and water in saucepan; bring to boil.
2Cover, reduce heat and simmer 20 minutes or until rice is tender and liquid is absorbed.
3Combine cornmeal, salt and soda in large bowl.
4Add rice, milk, corn, eggs,onion, green chilies, jalapeno, vegetable oil, salt and pepper; stir well.
5Pour into 12-inch by 8-inch baking dish that has been coated with cooking sprya.
6Bake uncovered, at 350°F for 45 minutes or until lightly browned.
7Sprinkle with cheese, if desired, and bake an additional 5 minutes or until cheese melts
