| cup | Water | | 1
| cup | Cornmeal | | 1/2
| tsp | Salt | | 1/2
| tsp | Baking soda | | 1
| cup | Skim milk | | 1
| can | 8oz cream-style corn | | 2
| | Eggs, lightly beaten | | 1/2
| cup | Onion, chopped | | 1
| can | Green chilies, chopped | | 2
| tbsp | Jalapenos, minced(optional) | | 1
| tbsp | Vegetable oil | | 3/4
| cup | Lowfat Monterey Jack cheese | | | Grated, optional | | | Salt & pepper |

Procedures:
| 1 | Combine rice and water in saucepan; bring to boil. | | 2 | Cover, reduce heat and simmer 20 minutes or until rice is tender and liquid is absorbed. | | 3 | Combine cornmeal, salt and soda in large bowl. | | 4 | Add rice, milk, corn, eggs,onion, green chilies, jalapeno, vegetable oil, salt and pepper; stir well. | | 5 | Pour into 12-inch by 8-inch baking dish that has been coated with cooking sprya. | | 6 | Bake uncovered, at 350°F for 45 minutes or until lightly browned. | | 7 | Sprinkle with cheese, if desired, and bake an additional 5 minutes or until cheese melts |
