Ingredients:
1 x-SHELLS:
1 lbsLean ground beef
1 tspChili powder
1/8 tspMinced garlic
1 eachEgg
1/4 tspSalt
1 xFILLING:
1 cupSour cream
1/2 tspCumin
3 tbspMinced green onions
2 tbspChopped ripe olives
2 tbspChopped green chiles
1 x-TOPPING:
1/3 cupShredded sharp Cheddar chees
Procedures:
1Shells: combine ingredients for the shells and divide into 30 balls.
2Press into miniature muffin tins forming miniature "pie shells".
3Filling & topping: combine filling ingredients and divide mixture evenly among the meat shells.
4Place a heaping ?teaspoon of shredded cheese on top of the filling in each shell.
5Bake in a preheated 425 degree oven for 7-8 minutes.
6Remove pinata cups from muffin tins and place on paper towels to drain.
7Serve hot.
8Pinata cups may be prepared the day before serving, covered, and refrigerated.
9Reheat in a 350 degree oven for 5-8 minutes.
