Ingredients:
MARINADE
1 tbspRed wine vinegar
1 tbspFresh lemon juice
2 tbspDijon Mustard
1 Garlic clove, minced
1/2 tbspWorcestershire sauce
Dash hot pepper sauce
Pinch dried oregano
Pinch dried tarragon
Salt & freshly ground pepper
3 ozOlive oil
1 1/2 lbsMushrooms sliced
1 medRed onion, thinly sliced
CURRY MUSTARD SAUCE
2 tbsp(?stick) butter
2 tbspAll purpose flour
3/4 cupMilk
1/2 cupChicken broth
2 tbspDry sherry
2 tbspPrepared mustard
1 tbspCurry powder or to taste
Salt & freshly ground pepper
6 Slices seedless Russian rye
-bread (I use pumpernickel).
3 cupShredded Swiss cheese
Procedures:
1For marinade: combine first 9 ingredients in large bowl; blend well.
2Whisk in olive oil.
3Add mushrooms and onion and toss lightly to coat.
4Set aside.
5For sauce: melt butter in small saucepan over medium heat.
6Stir in flour and blend well.
7Reduce heat to low and cook 2 minutes.
8Blend in milk, broth, sherry, mustard, and curry powder.
9Bring to boil, stirring constantly.
10Remove from heat.
11Taste and season with salt and pepper.
12To assemble: preheat over to 350" f.
13Arrange bread on baking sheet.
14Divide mushrooms evenly among slices, mounding slightly in center.
15Top each with about 3 t of sauce and sprinkle with ?c cheese.
16Bake until sandwiches are heated through, about 20 minutes.
17Di note: i served this one new year"s day to a bunch of raving football fanatics and they actually took time to comment (between grunts) and ask for more.
