Lemon-poppy cake ring

Ingredients:
1 1/2 cupSugar
1/2 cupMargarine or butter, softened
1 tbspLemon extract
1 tspVanilla extract
3 largeEggs
2 cupAll-purpose flour
3/4 cupMilk
1/4 cupPoppy seeds
1 tbspGrated lemon peel
2 tspBaking powder
1/2 tspSalt
Confectioners' sugar (opt)
Procedures:
1Preheat oven to 350°F.
2Grease and flour 9-inch bundt pan.
3In a large bowl, with mixer at low speed, beat sugar, margarine or butter, lemon extract, vanilla extract, and eggs until blended.
4Increase speed to high; beat 5 minutes or until very thick, occasionally scraping the bowl with a rubber spatula.
5Reduce speed to low; add flour, milk, poppy seeds, grated lemon peel, baking powder, and salt; beat until well blended, scraping bowl often.
6Pour batter into pan.
7Bake 50 to 60 minutes until toothpick comes out clean.
8Cool cake in pan on wire rack 10 minutes; remove from pan.
9Cool completely on rack.
10Sprinkle with confectioners" sugar if desired.
