Ingredients:
1/3 cupSugar
1/4 cupSalt
2 cupSoy sauce
1 cupWater
1 cupRed wine
1/2 tspOnion powder
1/2 tspGarlic powder
1/2 tspPepper
1/2 tspTabasco sauce
Procedures:
1Trim all fat from meat.
2Slice meat with the grain to about ? to ? thick.
3The meat slices nicely when semi-frozen, or your butcher will slice it for you in his machine.
4Place meat in the cool marinade and leave overnight, or for no less than 8 hours.
5Remove from brine and allow to air dry without rinsing.
6Smoke in your smoker for 12 to 16 hours or until jerky has dried out to your liking.
7Use your favorite fuel for smoking.
