Hot spicy cold noodles

Ingredients:
1 lbsChinese noodles
-(fresh)
4 Scallions (or green
-onions), chopped
2 tbspChili oil
2 tbspSesame seed oil
2 tbspVinegar
2 tbspSugar
1 1/2 tbspSalt
1/2 tbspBlack pepper
-(fresh ground)
1 tbspMSG (optional)
2 Red peppers (fresh)
-chopped
Procedures:
1Cook the noodles in boiling water for 3 minutes, then drain.
2Rinse them in cold water until they are cool, then set aside to drain.
3Make the sauce by mixing together all of the other ingredients.
4Heat about 4 t oil in a wok.
5When it is hot, pour in the sauce mixture, and then the noodles.
6Stir well to cover the noodles with sauce, then remove and cool.
7Notes: * easy, spicy-hot cold noodles for summer -- this recipe is an easy prepare-ahead dish for a hot summer day.
8It makes a good barbecue side dish for all of us who are tired of potato salads.
9Yield: serves 4-* you can serve this dish warm if you want, but it is better when cold.
10It is a good dish to prepare the previous day and leave in the refrigerator overnight.
